I believe in the relationship of simplicity and elegance. Often times in life and in cuisine we find ways to make simple things, simple decisions, into convoluted messes that end up stopping our forward momentum.
When we look beyond the lofty descriptions and beautiful imagery we can get to the simple core of something and then find the elegance of it.
Today we’ll look at a Shaved Steak Crostini with bleu cheese, sweet peppers and sunflower sprouts.
Sounds complicated right? In reality it’s a glorified cheesesteak on toast once you simplify it down.
So let’s get to it.
I’m in love with this brand of shaved beef but feel free to use any good cut of beef you favor, you’ll just have to slice it yourself.
Slice a large white sweet onion and a handful of mini sweet peppers.
Add two tablespoons of Olive oil into a hot wok over medium high heat, followed by the sliced onions. Once they have softened, add the shaved steak.
Season with salt and pepper. (NOTE: Don’t let Salt Bae fool you, be cautious with that salt hand. You can always add more salt later if needed but you can’t get it out once it’s in the pot.)
Add the sweet peppers, a 1/4 cup of honey, 1/4 cup of worcestershire sauce, and a 1/4 cup of bbq sauce. Toss it until it’s all lovingly mixed and the peppers have softened. Add salt and pepper IF NECESSARY.
Toast a few baguette slices, top with the beef mixture, a few chunks of bleu cheese and voila! I added a few sunflower sprouts for color and a hint of earthiness.
It looks and tastes like you’ve crossed into the world of high end cuisine but in reality all you’ve done is embraced the simple elegance of being an XL man.
